(Hong Kong, 18 June 2019) Whether you’re trying to escape the humidity of Hong Kong or the intense heat of the Wadi Rum desert, the answer to keeping your cool is an icy-cold beverage. At BEDU, visions of refreshment are coming to the rescue with five new thirst-quenching cocktails (HK$95 – HK$100) and three revitalising mocktails (HK$65) to get you through the scorching summer days.
The new libations are inspired by the exotic flavours of the Middle East and range from reinvented classics to spirit-forward concoctions to easy-going cocktails that make every occasion, a drinkable occasion. Guests are invited to enjoy their drinks with friends at the bar, to toast at the dinner table, or to have an alfresco party on the steps of Shin Hing Street staircase for the ultimate laid back evening sessions.
BEDU’s creative bar team have worked tirelessly to formulate a series of homemade elements to add both depth and dimension to the cocktails. Examples include vermouth infused with the distinctive taste of dill and a simple syrup injected with the freshness of lemongrass. Borrowing a few tips and tricks from the BEDU kitchen, limes and avocado are transformed into a curd and pineapple is combined with coffee before being clarified with coconut cream to create an aromatic cordial.
In an effort to reaffirm a sustainable outlook at BEDU, the drinks have been created to utilize ingredients with a minimal waste attitude. For instance, egg whites (from the aforementioned) curd can also be used in other cocktails such as the classic Whiskey Sour.
Cool Cocktails
To the start the evening on a clean slate, guests can opt for the Bisha. Named after the Bedouin ritual to detect lies, it is a smooth and refreshing cocktail, grounded by a dose of white rum, bourbon and a stealthy pour of absinthe. It’s freshened up by the zing of lemon, pomegranate and a fragrant mix of five spices, before milk is used to clarify the cocktail to become as clear as your conscience.
A cocktail made for easy-drinking is the lightly sparkling and aptly named Oasis; where Beefeater Gin provides a crisp base and flavour comes from a herbaceous mix of lemongrass syrup, basil and lime. It’s then topped with soda water for a spritz of summer to complete this highball.
Reinvented Classics
Not forgetting the classics, Bloody Martini sees the potent merging of the Bloody Mary and Martini. It’s a new take on not one, but two celebrated cocktails and made with an intoxicating blend of gin and vodka coupled with tomato water and homemade dill vermouth. The instantly recognisable Worcestershire sauce and Tabasco are then added for that familiar spice kick.
The Ney-rita calls out any tequila nay-sayers and converts them. Created with tequila and cointreau, it’s a generous nod to the original margarita, but it’s the addition of homemade lime avocado curd that breathes life into an old favourite. Exceedingly smooth and creamy with a sensational tartness that feels like it belongs in a dessert, though no spoon is required.
Go Hard, or Go Home
An ode to the travelling Bedouins, the Nomad is not one for the faint-hearted. It’ll keep you going on your drinking journey with all the power from sweet white rum stirred down with a pineapple coffee cordial, for a unique summery edge.
Easy Breezy Mocktails
For guests that prefer to keep it cool and dry, the evening can begin with tea — a traditional welcome drink of the Bedouin tribes, where the Shay Grapefruit adds a vibrant twist; mingling green tea with zesty grapefruit.
Or perhaps they will drink to their health with Garden Party, which makes use of the homemade lime avocado curd once more, and brings in fresh lime to brighten up the already salubrious tomato water-based drink.
There’s no need for parental guidance with this alcohol-free summer cooler, as The PG is as simple as that: Spiced P for pineapple and fiery G for ginger beer. A drink to revive our spirits and bring the temperature down.

About Meraki Hospitality Group
Meraki Hospitality Group is a Hong Kong-based company, founded in 2018 by brother and sister duo Alexis & Laura Offe.
