CÉ LA VI Launches New Dishes for Chinese New Year and Valentine’s Day
Stylish Menus with Prosperity in Mind and Served with a Pinch of Passion
(Hong Kong, 22 January 2019) – This Chinese New Year and Valentines season, CÉ LA VI’s Asian influence celebrates each holiday with contemporary flair. California Tower’s stylish restaurant fuses the freshest, regional and traditional ingredients with modern tastes to enjoy these special occasions with loved ones in inimitable style.
The collection of new dishes is specially crafted to bring luck, love and romance to guest’s tables this February.
CÉ LA VI’s Chic Chinese New Year
Chef has created the ultimate auspicious menu with Chinese culinary inspiration at its core to celebrate the Year of the Pig. Taking inspiration from classic Chinese blessings, each dish will embody a meaningful wish, exclusively available from 21 January-28 February; the New Year Menu is priced at HK$688 per person.
Guests start with the ‘Prosperity’ Yu Sheng ‘Lo Hei’ -CÉ LA VI’s contemporary version of Lo Hei salad to bless friends and relatives with tokens of love and well wishes in the Year of the Pig. Chef’s creative interpretation includes salmon, tuna and yellow tail sashimi served with accompaniments of cashew nuts, sesame seeds and a honey plum sauce, mixed to combine the fresh flavours in a colourful all-encompassing appetizer.
Then four fresh oysters which celebrate ‘Longevity’ are served on ice with smoked ikura, coriander, chilli and negi (Japanese onion) and the Harmony course encompasses three generous cuts of roasted duck breast atop a delicate bone broth soup, with winter melon, ginger and watercress.
In Chinese, the character “fish” has the same sound used for the word “abundance”, the fourth course honours this, ‘Wealth’ brings diners luck through a delicious combination of steamed Asian sea bass, taro root, lily bulbs and shiitake mushrooms, with Chinese sausage and crushed chilies, giving the dish a deep and spicy kick.
A star dish for those CNY celebrations, the premium Rangers Valley Onyx beef takes center stage in the ‘Fortune’ dish, rich and melt-in-the-mouth slow-roasted ribeye coated in black truffle teriyaki glaze, served with pumpkin purée and sweet, crispy shallots. Rounding off the decadent dinner, the final course entitled ‘Love’ is a butterfly pea flower soup, with sweet sesame dumplings. Traditionally at this time of year, tangyuan dumplings are eaten as warm desserts but CÉ LA VI’s modern twist serves this sweet classic cold, with red bean ice cream.
Valentine’s Day - Served with Kiss
From 14 – 17 February, guests can be seduced by a specially prepared Valentine’s Day tasting menu, with options for couples (HK$1,488) groups of four (HK$2,488) or those who may be interested in a menu ménage à trois (HK$1,988 for three people).
Lovingly prepared by Chef, the Ponzu Marinated Hamachi is a light and sexy starter with added caviar, crème fraîche and a sweet citrus dressing, perfectly cutting through the fish to leave a zing on the tongue. A deliciously ripe and sweet Italian Heirloom Tomato & Sautéed Squid Salad follows.
Couples can cleanse the palate for more tantalizing tastes to come with the Clear Mushroom Soup, made with locally sourced Chinese mushrooms. Celebrating Asian flare, a passionately mixed fiery Lobster & Prawn Laksa served with Thai asparagus and torch ginger is next - the most decadent shellfish with succulent and juicy prawns serves up a little heat between lovers at the table.
A rich and sumptuous Grilled Wagyu Beef in Red Miso & Port Wine Sauce, pairs beautifully with cauliflower puree, fried shallots and king oyster mushrooms. The smoky taste of the red miso gives an enriched flavour to the dish, layering perfectly with the port wine sauce.
A fruity finish, the Strawberry Mille-feuille is filled with mascarpone crémeux and deep red currant sauce. Pink berry ice cream accompanies the dish, topped with a marshmallow love heart and served with flair.
Available for evening bookings only, CÉ LA VI welcomes diners across Hong Kong to celebrate all that February has to offer.
