Aqua Announces 1kg White Truffle Auction & Unveils Truffle
Ice Cream To Mark The Highly Anticipated Season
White truffles arrive from the highly lauded Savini Tartufi
(Hong Kong, 8 November 2017) Aqua welcomes white truffle season with a series of five new and unique dishes available from today to 31st December. Tohonour the occasion aqua is co-hosting a generous white truffle dinner with the Savini family, in aid of The Duchess of Kent Children's Hospital on 23rd November, supported by the Italian Chamber of Commerce and the Italian Women’s Association.
The white truffles in each dish are sourced from Savini Tartufi hailing from one of the most gastronomic regions in Europe – Tuscany, Northern Italy, where the world’s premium truffles are located. The truffles are harvested from below oak trees, and are gathered every November by specially trained dogs.
Aqua has creatively crafted dishes which focus on innovation, showcased in the white truffle ice cream dessert. To start is a Hand-cut beef tenderloin tartare, Parmigiano foam with a sous vide egg yolk (HKD188), a take on a classic featuring the revered ingredient.
Group Executive Japanese Chef Tatsuya Iwahashi from the Japanese kitchen has created - Scallops with white truffle miso butter, hijiki with yuba pumpkin miso, truffle ponzu & tempura of ohka hijiki (HKD288) combining meticulously sourced produce to celebrate this seasonal specialty.
Chef de Cuisine Davide Borin from the Italian kitchen presents Beef cheek cappelletti, pecorino, celery root & chicken broth (HKD218), the intensely-flavoured white truffle is paired with different ingredients to bring out the best of its unique flavour. The Beef tenderloin, ume shallots, truffle braised daikon with tomato nacho miso (HKD388) features produce which enhances the essence of white truffle in different forms.
Truffle enthusiasts can also experience a modern take on the culinary ‘gift of the gods’ with an after-dinner treat, smooth fior di latte truffle ice-cream, amaretto crumble & mulled wine reduction (HKD148). In addition, all guests who dine at aqua throughout the season will receive a personalised gift of truffle butter, generously provided by the Savini family.
Each dish is decorated at the table with hand-shaved truffle, guests have the option to add as much or as little of the esteemed truffle as they wish starting from only one gram. Prices listed above are exclusive of the cost per gram. Guests may also enjoy the dishes as a menu priced at $988 per person.
Join aqua on the 23rd November for a white truffle charity dinner celebration co-hosted by the Savini family. Renowned truffle hunter and trader Cristiano Savini himself and his brother will be flying from Italy to attend the event and impart their vast knowledge; bringing along with them an impressive 1kg white truffle available exclusively for the evening. Priced at $988 per person, tickets to this one-off evening are limited and, include a five-dish menu featuring all dishes mentioned above. Additional charges for shavings from the Savini truffle will be on a ‘pay what you wish’ basis, with all proceeds from the evening going towards The Society for the Relief of Disabled Children, which supports The Duchess of Kent Children's Hospital at Sandy Bay.
