(Hong Kong, 6 November 2018) Meraki Hospitality Group, of the popular modern Brazilian-Japanese boteco Uma Nota, and Modern Middle Eastern restaurant & bar BEDU, is presenting festive feasts for end of year celebrations.
For those who are looking for family festivities, or a homely-style Christmas dinner, Uma Nota and BEDU have added brand new dishes to a selection of favourites, with sharing at their core. The menus tell the story of far-away Christmas traditions, replacing roast turkeys with fish, lamb, and beef, cooked using cultural techniques from around the globe.
Uma Nota
Using Japanese ingredients and keeping Brazilian street food in mind, Uma Nota has comprised two Brazilian feasts, offering a Chef’s Menu throughout November and December, and a curated Christmas brunch, available only on Christmas Day and Boxing Day.
With an array of vegetarian and gluten-free options, the evening set meal is priced at HK$450 per person, filling each table with eight abundant dishes from each section of the à la carte menu. From the raw menu, Chef Gustavo has selected signature dishes reminiscent of South America like Ceviche goa, a fresh mix of fish, squid, shrimp, coriander, red onion, curry and coconut milk. Smaller dishes are served to the table next, including Chef’s new recipe of Salteado de lulas, a fragrant blend of squid, green tomato sauce, cherry tomato, red onion, coriander, served with cassava fries; and the famed Coxinhas de frango, chicken and okra dumplings with homemade chili sauce.
Two portions ofskewers are also served, Chicken with a spicy chipotle sauce, and Portobello with red bell pepper and chimichurri sauce. A refreshing Avocado salad is chosen from the “Green” section, with roasted tomato, onion, baby corn, green leaves and a sweet green chilli dressing. And finally the sharing plate of Costela no bafo, roasted beef short ribs wrapped in banana leaves – a traditional cooking technique in Brazil – and served with pickled cucumber and cassava fries.
For a free-flow booze brunch feast, available from 12noon on December 25 and 26, Uma Nota is serving six dishes from the menu including; Vegetarian ceviche, with avocado, mushrooms and Palmito used instead of fish, Tiradito japonés, thinly sliced white fish with Japanese soy sauce and yuzu juice, Pastéis de carne seca, Brazilian style fried wontons with beef and cheese, Portobello skewers, and Beef skewers with a side of farofa. A new Brazilian favourite, has been added to the festive brunch, Pão de Queijo con Barriga de Porco a traditional Brazilian cheese bread with pork belly, tamarind sauce and pickled cucumber.
The main event, to be shared amongst two, is a choice between a whole (boneless) seabass, wrapped in banana leaves and roasted before being coated in vinaigrette, cassava farofa and fried banana, with the Portuguese name Robalo Assado em Folha de Bananeira; or a 300g grilled flank steak with farofa and feijão salad, called Fraldinha (+HK$65 per person).
For larger groups looking to celebrate Christmas early throughout November, or private bookings during December, Uma Nota offers three packages*, starting from lunch and evolving into a full Brazilian party. Package one offers a choice of nine favourites from the à la carte menu to form a Brazilian sharing-style feast between 12noon-3pm for HK$450 per person. Make it boozy with free-flow prosecco, draught beer, soft drinks, and Caipirinha fresca for an extra HK$200 per person, and host the ultimate occasion with #thedrums, an interactive Brazilian drumming session for a total of HK$1,090 per person.
BEDU
The Bedouin-inspired restaurant has crafted a selection of favourites for festivities throughout November and December. With a modern take on Middle Eastern flavours and culinary traditions, BEDU’s Festive Chef’s Menus are ideal for sharing for parties of up to six guests.
The meal begins with a selection of house signature dips and flatbread, followed by Eggplant fattoush with pomegranate dressing and crispy chickpeas, and Turkish dumplings called Red lentil manti, served with chilli oil and dry mint.
The table centerpieces are served together, with tailored portions for optimum sharing. BEDU takes a modern approach to the traditional Middle Eastern meat served during Christmas, mincing a leg of lamb to create a Lamb kibbeh. The dish is served with a zhoug labneh and a pine nut and cranberry salad, adding festive flavours to the dish.
What takes centre stage is a treasured Lebanese family recipe, taught to Chef Corey over 12 years ago by his mentor in Australia. The Slow baked salmon walnut taratoris served with tahini yoghurt, and a squeeze of fresh lemon. No feast is final without dessert, BEDU serves up a Lemon and pistachio clafoutis, a blondie-like cake made with ground almond flour, for a sweet end to a seasonal spread.
Gluten-free and vegetarian friendly dishes at BEDU can be adjusted to suit dietary requirements, with the option to alter the menu. BEDU’s Festive Chef’s Menu requires pre-order with 48 hour notice.
*A minimum spend from HK$10,000 is required, 50% of which is a required payment to secure the booking, and the remaining balance is paid on the day.
