Statement Revives the Great British Tradition of Roasts
Carved Tableside from an Antique Silver Trolley
(Hong Kong, 22 March, 2019) In keeping with the design of its beautifully restored colonial dining room – Statement, the modern British restaurant – celebrates the time-honoured tradition of the great British roast. Uniquely this is served tableside from a magnificent silver trolley which now forms the centrepiece of Statement’s weekend Britannia Brunch, as well as being an a la carte option for both lunch and dinner.
The exceptional silver trolley at Statement is the only one of its kind in Hong Kong. It is a splendid feature that adds a touch of elegance and theatre to the stunning dark teal dining room. Aqua Restaurant Group acquired this antique item from a private residence in England and it was carefully restored to its former glory and then especially shipped to Tai Kwun to take pride of place in the restaurant.
The carving experience is thought to have originated in the 1930s, when a top London restaurant regularly hosted chess tournaments. It is believed to have evolved from the practical idea of producing a movable piece of furniture that would keep the food at the perfect temperature, and allow smooth service, without disturbing lengthy matches.
Statement’s traditional Roast British beef with Yorkshire pudding is accompanied with seasonal vegetables, potatoes roasted in goose fat and crisp, yet light and fluffy Yorkshire puddings. The roast beef is hand-carved directly in front of guests with all the finesse of tableside service from a rare and original, 1960s silver trolley, reviving an elegant style of service that was once popular in some of the most desirable establishments in London’s West End. The extraordinary domed piece conjures up the glitz and glam of the time, when carveries first started appearing in aristocratic homes and of course the Royal Household. This intimate style of tableside service would also have been used for special occasions to serve senior police officers stationed in the former Police Headquarters – the very same building where Statement stands today.
To this day the quintessential English roast is still hailed as Britain’s favourite national dish. It has even been said that the Britain’s iconic red and gold-clad guards of the Royal Household introduced by King Henry VII in 1485, were so-called “Beefeaters” because they were entitled to eat as much roast beef as they liked from the King’s table.
This British roast is part of Statement’s mission to revive and update the traditional cooking techniques for which Britain was historically famous, while focusing on the provenance of the ingredients, which are seasonally updated and painstakingly sourced from the finest purveyors throughout the British Isles. Guests will also be invited to enjoy a variety of seasonal roasts such as lamb, turkey and ham served throughout the year.
The silver trolley is now the highlight of Statement’s Britannia Brunch available at weekends and public holidays from 12pm to 3pm for HK$628 per person with free-flow Veuve Clicquot Champagne, as well as being available a la carte for both lunch and dinner for HK$358. Served alongside other British favourites such as dressed Dorset crab with almond cream & crushed avocado, theclassic and sinful Sticky toffee pudding with butterscotch sauce and clotted cream, alongside hand-churned artisan British cheeses served with homemade Scottish oat biscuits.
Statement guests can enjoy hours of refinement and some of the finest British cuisine served in one of the most elegant historical dining rooms in Hong Kong.
