(Hong Kong, November 21, 2018) Dynasty Garden, the pre-eminent Cantonese restaurant in Kowloon Bay, brings warmth and joy to the party season with exceptional menus. Each showcases the strengths of a culinary team renowned for their painstaking preparation of traditional dishes, their creativity, and their insistence on premium produce from the land and water. Gather with friends and family in the spacious dining room, or one of five elegant, ensuite private rooms. Alternatively, smaller groups will find Dynasty Garden’s cosy, semi-private alcoves the ideal spot for merry Yuletide celebrations.
Peking duck, crispy on top and succulent within, is the heart of a special six-course set menu to herald the festive season. Served with all the trimmings – juicy cucumbers, crunchy scallion, spicy-sweet seafood sauce, plus piping-hot steamed pancakes – the bird is roasted to perfection and the skin sliced with a theatrical flourish tableside. The meat is then minced and enjoyed later with diced vegetables and fried rice.
Before this main event, a trio of appetising treats is led by drunken shrimps. In this new addition to Dynasty Garden’s repertoire of Cantonese favourites, the freshwater crustaceans get their alcoholic kick from Chinese yellow wine before being poached with garlic, ginger and onion. Crabmeat baked in the shell with cheese follows the shrimps; then a soup of that most prized of mushrooms, matsutake. Double boiled to enhance the intensity of its aromas, the broth is presented in individual portions, poured from a teapot. The dessert course is a threesome of Dynasty Garden specialities that provides a delightful diversity of textures, temperatures and sweetness: creamy walnut soup; refreshing chilled lychee pudding with aloe vera; and delectable deep-fried mango roll infused with almonds.
As winter chills the air, claypot dishes capture the imagination, warming the body and soul. As ever, imagination in the Dynasty Garden kitchen is unbounded, with a menu of more than 22 different delicacies to satisfy all claypot cravings. From traditional Chinese sausage and pork ribs to European gastronomic-inspired combinations such as Ibérico pork loin with salty fish, and French chicken and frog leg, a hearty baked rice dish is a must for the seasonal table. Braised casseroles include grouper with bitter melon, garlic and black bean sauce, and sea cucumber with goose web, shiitake and oyster sauce, while chicken with chestnut is a Christmas classic. Lamb brisket, which has been slowly braised in the pot with bamboo shoots, black mushrooms and bean curd, is served with a complimentary plate of Chinese lettuce or spinach.
A third menu available for a limited time will leave lobster lovers in la-la land. The king of crustaceans stars in no less than 18 preparations, running the gamut from baked with cheese and butter; sautéed in sha cha sauce; stir-fried with cashews, bell pepper and chilli; steamed with egg white and Chinese yellow wine; and braised in a casserole with vermicelli, ginger and spring onion. Being teamed with Shanghainese sticky rice cake, and swimming in tom yum kung are among the more inventive takes. Fresh local lobster can also be savoured as soup, congee and e-fu noodles with XO sauce. Choose one lobster dish or build a themed dinner around this wealth of choice. After all, indulgence is the key when celebrating this season.
