Uptop Bistro and Bar 推出春季「五色養生菜單」晚餐及「櫻の花見」主題下午茶
(香港,2017 年 2 月 27 日)- 古語有云:一年之計在於春。於萬象更新的春天,除了可為新一年作計劃外,也是我們淨化調養身體的最佳季節。今個春天,Uptop Bistro 將於 3 月 1 日起推出「五色養生菜單」晚餐(每位 $388,另加一服務費),以有益食材及繽紛色彩為身體打打氣。此外,餐廳亦趁着這個櫻花盛開的季節呈獻「櫻の花見」主題下午茶,讓你細味一系列櫻花甜品及和風小食,與你相約於春日花見。
「五色養生菜單」晚餐:
菜單由餐廳主廚 Robin 特別設計,以西式手法呈現出這個中西合璧的晚餐,全因 Robin 父親當過中醫師,亦曾開設餐館。他自小在耳濡目染下對中藥材的運用及特性非常感興趣,藉此在這菜單中發揮出來。菜單裏面加入了多款中式食材,包括杞子、淮山、當歸、雪耳及燕窩等,炮製出滋補養生佳餚,讓食客於細嘗美味之餘,健康亦有所裨益。在視覺效果方面,Robin 更運用紅、黃、綠、黑及白五色作主題,將菜式舖排成不同主色調,務求以雪耳的白、當歸的黃及香草的綠等,突顯不同食材的特色。
晚餐以頭盤「薄切慢煮雞卷伴杞子番茄莎莎」揭開序幕,雞卷用 64 度慢煮後以冷盤薄切形式上碟,配上清新的番茄莎莎,再加入用馬德拉酒浸過的杞子,酸甜之中帶有微微酒香,開胃怡人。接下來的餐湯可從「紅菜頭甘筍番茄清湯」或「鮮菇松露海藻湯」二選一,前者以紅菜頭、甘筍、番茄和少量橙皮慢火熬六小時成清湯,配以粒粒甘筍及紅菜頭增加口感,清甜鮮味。「鮮菇松露海藻湯」則以鮮冬菇和海藻各一半,煮三小時後將材料打碎至濃稠,最後加入黑松露醬點綴,香郁撲鼻,啖啖滿載菇香。迎接主菜前,先品嘗多一道「米形粉配南瓜蓉及燕窩」,意大利米形粉煮熟後與美國奶油南瓜蓉及巴馬臣芝士同炒,最後加上燕窩,滋味滿載。
主菜方面,共提供五款不同顏色選擇,包羅海鮮和肉類,讓客人自選心水菜式。以黑色作主題的「香煎鴨胸伴珍珠小米飯及北京填鴨醬」靈感取自北京填鴨,鴨胸先用鴨油油封慢煮 4 小時,再煎香表面,然後切成薄片,油香十足。來自中東的珍珠小米飯煮熟後混入黑芝麻北京填鴨醬,酸甜的小米配煎鴨胸非常合襯。喜歡海鮮的客人可以選白色為主的「太平洋比目魚拼炸淮山條及檸檬柚子汁」,比目魚柳簡單煎香以保留原味,軟腍多汁。新鮮淮山用炸薯條方法炮製,切成粗條後上粉油炸,造成外脆內軟的效果。醬汁則用日式柚子汁,加入青胡椒、檸檬皮、忌廉及油醋製成,用魚柳蘸點同食更顯滑溜。「紅酒燴加拿大豬架及慢煮豬腩配燒烤汁」以紅色為基礎,特別同時選用加拿大豬架及五花腩兩個部位,於菜式中營造出對比。豬架在紅酒雜菜汁中慢燴 5 小時,肉質嫩滑又滿載紅酒香氣;豬腩則先用香草蒜頭汁浸泡 12 小時入味,再加入洋蔥及番茄以 85 度慢煮 8 小時,上碟前再烤香表面,入口即溶卻不覺油膩。黃色的代表是「當歸燴羊膝配芝士薯蓉及白酒當歸汁」(另加 $58)。Robin 大膽利用重味的藥材當歸入饌,並捨棄常用的燉湯方法,以當歸燴羊膝。羊膝加入當歸、白酒及雜菜燴煮 2 小時,羊膝肉軟腍而滲出淡淡當歸味,藥膳味十足。旁邊配以車打芝士薯蓉及白酒當歸汁,風格非常獨特。「安格斯西冷配法邊豆、球芽甘藍及香草蓉」(另加 $58)則以綠色做主角,7 安士美國安格斯西冷扒先輕輕慢煮再烤出表面坑紋,牛味濃郁。香草蓉用了多種新鮮香草製成,包括意大利芫茜、百里香、香葉及奧勒岡草,為西冷味道添上層次。
最後客人可從三款甜點中自選一款,推介「蘋果焦糖酥皮伴雪耳及雲呢拿雪糕」,焗至香脆的酥皮上放上焦糖煮蘋果及雲呢拿雪糕,再加上雪耳增加口感。另有「黑芝麻芝士蛋糕配朱古力雪糕」及「朱古力蛋糕配紅莓雪葩」兩款甜點選擇,為完美晚餐作結。餐廳另提供葡萄酒配對,每位加 $168 即可為菜式配上 3 杯美酒,令晚餐更完滿。
「櫻の花見」主題下午茶套餐:
每年春天都是日本人賞櫻的季節,傳統上眾人約會坐在櫻花樹下,以美酒佳餚伴隨朵朵櫻花,互相映襯。Uptop Bistro 特別呈獻「櫻の花見」日式主題下午茶,集合一系列櫻花甜品及和風小食,將氣氛帶到餐廳中。為了貫徹櫻花主題,餐廳更特地運用了花形菓子盒、櫻花餐具及粉紅色主調,襯托出濃厚氣氛。
下午茶內包羅多款特色甜品,包括「和菓子」、「櫻花曲奇」及「櫻花馬卡龍」等,推介加入了蜜漬櫻花的「水信玄餅」,像水滴一樣晶瑩剔透,口味清甜而順滑。當然亦少不了日式糕點「士多啤梨瑞士卷」,粉紅色海綿蛋糕裏面捲了鮮忌廉及大粒士多啤梨,口感非常豐富。
鹹食方面,就有「甜蝦迷你手卷」、「醃三文魚配蟹肉沙律」、「吞拿魚他他配青芥辣蛋黃醬」、「吉列炸蝦」及「紫薯可樂餅」等。「日式鰻魚春卷」破格將日式照燒鰻魚放到中式春卷之中,香脆春卷皮加上濃郁鰻魚味,喜愛吃鰻魚的客人不容錯過。「櫻花蝦冷麵」將櫻花蝦、黑魚子醬與粉紅色冷麵混合,幼滑冷麵中能嘗到櫻花蝦及魚子,份外充滿日式風味。
下午茶中的飲品亦相當重要,餐廳特別創作出一杯加入了櫻花及玫瑰糖漿的特色飲品「櫻花 Latte」,白色奶泡上更畫出櫻花圖案,心思滿分。此外,餐廳同事更會在享用鹹點後奉上士多啤梨及綿花糖朱古力棒棒,更添浪漫氣息。
除最新推出的「櫻の花見」主題下午茶外,一直好評如潮的「幸福摩天輪」下午茶會同時供應,為你提供更多選擇!兩款下午茶(星期一至五 $348/兩位、星期六、日及公眾假期 $388/兩位)包兩杯咖啡或茶,客人亦可選擇額外加 $18 享用特色飲品「櫻花 Latte」一杯,或加 $48 選擇葡萄酒、Mimosa 雞尾酒或無酒精雞尾酒一杯,與親朋好友度過下午茶悠閒時光。

Welcome Spring With Uptop Bistro and Bar’s 5 Colours Healthy Set Dinner & Spring Sakura
(Hong Kong, 27th February 2017) – Spring is a great time for planning and revitalization. Starting 1st of March, we are launching our “5 Colours Healthy Set Dinner” menu, with nutritious and colourful dishes for your body and mind, as well as the “Spring Sakura” Afternoon Tea Set for you to savour the blooming pink!
“5 Colours Healthy Set Dinner” Menu
The 5-course menu is designed by Head Chef Robin Chan. Tracing back to his childhood, his father was a Chinese doctor and also a restaurateur. So Robin has been very familiar with the usage and benefits of different Chinese medicines and ingredients since he was a child. Therefore he put this knowledge to the menu and brought various Chinese ingredients like fresh yam, wolfberries, angelica, snowy fungus and bird’s nest into the dishes, making the menu courses not only do good on our palate, but also for our body and mind. Each dish is also presented and named with a theme colour, making them visually appealing.
The dinner begins with “Chicken Roll with Tomato Salsa, Wolfberries and Shallot Ring”, an appetizer of cold-cut chicken roll with tangy tomato salsa and madeira-soaked wolfberries, then follow on with a selection of two delicious soups. For a clear choice, you can simply pick the red "Tomato Consommé with Beetroot and Carrot" with 6 hours of preparation with fresh beetroot, carrot, tomato and orange zest. The creamy "Black Truffle, Shiitake, Kelp & Seaweed Soup" is a creative combination of shiitake mushrooms, kelp and seaweed. Blended to smoothness with a bit of black truffle paste, the soup is satisfyingly rich and fragrant. The yellow "Seme Cicoria with Pumpkin Purée & Bird’s Nest" comes right after the soup as the middle course. The al dente pasta is sautéed with butternut squash puree and parmesan cheese, topped with the luxurious bird’s nest.
For the mains, there are fantastic choices of 5 dishes in 5 different colours. The Peking Duck-inspired “Pan Fried Duck Breast with Pearl Couscous, Grilled Spring Onion, Black Sesame & Peking Duck Sauce” is the black themed choice. The tender and juicy duck breast confit is the perfect match with the pearl couscous mixed with Peking duck sauce. The white and succulent “Pan Fried Pacific Halibut, Celeriac Emulsion, Deep Fried Chinese Yam with Japanese Lemon Yuzu Sauce” is the best pick for seafood-lovers. The fresh yam is deep fried like potato fries but a healthier version. The lemon yuzu sauce also adds a light Japanese twist to the dish. “Braised Canada Pork Rack in Red Wine, Sous Vide Pork Belly with Barbecue Reduction” is the red hot dish contrasting the textures of braised pork rack and slow cooked pork belly. The experimental yellow dish “Braised Lamb Shank with Angelica, Cheddar Mash Potato & White Wine Angelica Glaze” (+$58) tries to bring angelica, a Chinese medicine with a strong taste, together with a braised lamb shank. Beef-lovers should order the “Grilled U.S. Angus Sirloin 7oz, Pan Fried French Bean, Brussel Sprout & Mixed Herb Purée” (+$58), which looks like a green art painting on the plate.
If you have room for some desserts, a selection of “Apple Caramel with Puff Pastry, Snowy Fungus, Vanilla Ice Cream & Biscuit Crumbs”, a decadent “Black Sesame Cheese Cake with Chocolate Ice Cream”, or “Crispy Chocolate Cake with Raspberry Sorbet” are your 3 choices to end your evening elegantly.
The “5 Colours Healthy Set Dinner” is priced at $388 (+10% S.C.) per person, and for an additional $168, guests can enjoy three glasses of wine pairing.
“Spring Sakura” Afternoon Tea Set
Spring is the blossoming season for Sakura, hence the Sakura viewing parties and feasts in Japanese tradition. We’re bringing the best of Japan in pink with the “Spring Sakura” Afternoon Tea Set. Serving a selection of Sakura sweet treats and Japanese savoury delights, this mustn’t-miss afternoon tea also features the flower shape boxes, Sakura cutlery in pink, creating a poetic ambience at Uptop Bistro.
The sweet treats include the elegant “Wagashi”, droplet-like “Sakura Jelly” and “Sakura Cookies”, followed by “Sakura Macaron” and “Japanese Strawberry Roll Cake”. Savoury offerings include “Shrimp Seaweed Roll”, “Japanese Fried Shrimp”, “Japanese Eel Spring Roll”, “Purple Sweet Potato Croquette”, “Pickle Salmon Roll with Crab Salad”, “Tuna Tartare with Wasabi Mayonnaise” and “Soba with Sakura Shrimp and Caviar”.
A special drink is also designed to match with the tea set, the “Sakura Latte” is a sweet pink drink with a Sakura icon on top of the milk foam! To finish off the romantic date, our waiters will bring you the Sweet Magic Wand with Strawberries and Marshmallow in Chocolate!
Apart from the “Spring Sakura” Afternoon Tea Set, fans of our popular "Deluxe Ferris Wheel" Afternoon Tea Set can still enjoy the fairytale tea set at Uptop Bistro! Served with a full selection of teas and coffees, the tea sets are available at $348 (+10% S.C.) for two every Monday to Friday or $388 (+10% S.C.) on Saturdays, Sundays and public holidays. Guests can further enjoy their experience with a glass of house wine, mimosa or mocktail for $48, or the special drink “Sakura Latte” at $18.
