COME AND SAMPLE THE ULTIMATE SCANDINAVIAN TASTE AT WINE & SPIRIT FAIR 2019

You are cordially invited to join us at the Hong Kong International Wine & Spirit Fair 2019 to network and sample some of the most amazing tastes from the North!

Pear & Carrot is excited to be partnering Sav at this year’s Hong Kong International Wine & Spirit Fair, to be held at the Hong Kong Convention and Exhibition Centre on 7-9 November 2019. 

Having discovered a recipe in an archive from 1785, Peter Mosten founded Sav in 2006 and began producing a uniquely distinctive sparkling wine made with Birch Tree sap tapped from the Nordic forests in Sweden.

The birch trees are grown on mineral-rich soil around Lake Storsjön in Jämtland, with the sap being fermented on the lees for over a year to create a perfect balance of sparkling bubbles and flavour. Currently around 100,000 litres of birch sap is harvested to produce over 130,000 bottles every year.

At the Fair, Sav will be featuring their signature products –

  • Sav Sparking Birch Sap Wine

A unique sparkling wine that is made in the traditional method, with the unique difference of using Birch Tree sap tapped from the forests in Sweden. The sap is fermented on the lees for up to 14 months creating the perfect balance of bubbles and flavour.

Ingredients: Birch sap
Alcohol: 12%
Serving temperature: 8-10ºC
Perfect to pair with smoked meat and seafood such as oysters and crayfish, enjoy served cold

  • Sav Sparking 2012 Reserve

Sav Sparkling 2012 Reserve is an exclusive sparkling birch wine, which was produced by first reducing the Birch sap to provide a bolder flavour and then fermenting the sap using traditional methods. The birch sap and is fermented on the lees for up to 7 years.

Ingredients: Birch sap
Alcohol: 12.5%
Serving temperature: 8-10ºC
Perfect to pair with sushi, oysters, smoked fish, goose liver and dark chocolate

  • Sav Snaps

Sav Snaps is an elegant spirit distilled using birch sap and Scandinavian plants. It has an elegant flavor, which is pure and fresh with a mild taste of juniper and vermouth, as well as an undertone of herbs and birch sap. Leaving a nuanced aftertaste that is balanced with a touch of lemon and caramel.

Ingredients: Birch sap and Angelica
Alcohol: 38%
Serving temperature: 0-8ºC
Perfect to pair with shellfish, herring and smorgasbord, and mixed in drinks and cocktails

  • Sav Glöd

Sav Glöd is our unique version of Glühwein. The Swedes call it Glögg but Glöd is truly a unique Elixir. Carefully selected in Spring, Jämtlandic birch trees are tapped by hand for their sap. The sap is slowly fermented into a birch wine.

Ingredients: Birch sap wine blended with natural flavor and spices like ginger, citrus, angelica, sugar and Sav Snaps.
Alcohol: 14%
Serving temperature: Fantastic warm in front of the fire or as an ice-cold aperitif before dinner
Perfect to pair with dessert such as fluffy chocolate mousse or berry panna cotta
