SINGAPORE, July 22, 2019 – Cook & Tras Social Library, located at the captivating Six Senses Maxwell, debuts a brand new Straits Heritage and Southern European progressive menu. Helmed by Executive Chef Ian Mancais, the chef for royal families in England and Dubai, it accentuates culinary highlights from Southern European and Asian traditions. Through his masterful interpretation of the brand’s Eat With Six Senses programme, Chef Ian uses sustainable and organic, local produce to compose a repertoire of healthy and clean signature dishes.
“Ian’s arrival at Six Senses Singapore after a deliberate search will be the highlight of sustainable F&B operations in Asia. Being the first two urban Six Senses properties, we hope to shape perceptions and advocate total wellness through the Eat With Six Senses programme and Ian’s unbridled creativity. With his childhood rooted in Asia, Ian’s diverse heritage has shaped him into a unique innovator with an acute appreciation of cultural trends, creating a delightful blend of authentic Southern European cuisine suited for the Asian palate while keeping authentic heritage gems on the menu.

Encapsulating the Eat With Six Senses programme, Chef Ian’s Southern European creations are brimming with nutrients and vitamins whereby each ingredient is carefully chosen for every dish. The refreshing Vine Tomatoes & Mixed Melon ($22++) features tangy, homemade citrus granite, creamy burrata and a drizzle of lemon balm vinaigrette providing an invigorating start to the meal. Rainbow Beetroot ($22++), a spectacular, visually-appealing salad is a crisp and crunchy edible work of art. Paired with whipped hummus and goat’s cheese coulis, walnut snow and walnut butter tuile’ orange, Rainbow Beetroot features layered flavours and textures.
Librarian’s Signatures include the succulent Steak Chimichurri, available in Tenderloin ($65++), Rib Eye ($55++) or Sirloin ($45++) cut. Topped with aromatic roast garlic puree, confit cherry tomatoes, house-made chimichurri sauce and crunchy asparagus, the Steak Chimichurri is a hearty and delightful main after a light, healthy salad.
For a taste of authentic Asian delights: Barramundi Bakar ($18++), featuring delicious grilled fish accompanied by fragrant chili-garam masala – a blend of grounded spices with exquisite flavour and aroma, is one not to be missed. A genuine rendition of the well-loved local dish, its flavours from freshly caught, sustainable Barramundi balances the chili-garam masala where many of the component spices boast numerous health benefits such as improved digestion and metabolism. The tender and savoury Iberico Pork Sate ($9++)with turmeric rub, complete with ketupat kicap manis and achar; as well as Nonya-style Inchi Kabin ($9++), marinated chicken drumettes with assam sauce, are perfect complementary bites for an absolutely umami local gourmet experience.
At Cook & Tras, the elegant social enclave is characterized by its thoughtfully curated book collection by the United Kingdom’s Ultimate Library, renowned for their dedication to building bespoke collections for hotels and private residences around the world. With special consideration for Six Senses Maxwell’s social library, they selected a storied collection of more than 3,000 titles that reflect the neighborhood as well as volumes on subjects such as wellness, meditation, nutrition, herbal medicine, natural history, climate change and sustainability. Featuring a mirrored ceiling highlighting the classic décor and inimitable style of famed designer Jacques Garcia, Cook & Tras reflects a warm European influence and personality showcased through richly textured custom designed furnishings.
