SINGAPORE, October 29, 2019 – A celebration of Southern European cuisine and a tribute to sustainable, organic local produce, Six Senses Brasserie debuts a Southern European menu and all-new brunch concept. The culinary journey starts every weekend with an innovative brunch approach. Available on Saturdays and Sundays only, Six Senses Brasserie will serve the need for clean eating and living well. Located within the stunning Six Senses Maxwell, the brasserie showcases Executive Chef Ian Mancais’ fun and quirky interpretation of European classics.
“While we were conceptualizing the new menu at Six Senses Brasserie, our dedicated kitchen team focused on showcasing premium ingredients that are sustainably sourced and organically-grown,” said Executive Chef Ian Mancais. “A true reflection of our Eat With Six Senses program, the menu features Mediterranean cooking methods that allows the ingredients to take centre stage. Each and every dish has been carefully created to deliver a wholesome, clean and nourishing meal that completes mindful eating and living at Six Senses Singapore.”
Heightening the sensory journey is a carefully curated wine list composed using contrasting labels from the new and old world. Six Senses Brasserie predominantly focuses on wines from France, Italy and Spain, complemented with a well-balance selection of new world treasures.
Available from 10.30am to 3pm every Saturday and Sunday, The Weekender’s Brasserie Brunch ($68++) is an ode to the glorious days off from work obligations. Guests can look forward to hearty Southern European dishes that focus on natural ingredients, sustainability and wellness. Start the brunch with “Graze with Our Grazing Boards”, offering a range of seven starters on a one-metre long board, featuring clean and green flavours such as the Lean Green Salad, Alive & Inspired Salad, Guacamole, Piccalilli Relish as well as a range of savoury delights, from Garlic Prawns to Smoked Salmon.
For mains, guests can pick from a selection of seven sumptuous dishes including the classic Eggs Benedict SSB Style on sour dough, layered with homemade guacamole, spinach, two organic poached eggs, unsalted butter and hollandaise sauce. Time-honored soul food Chicken & Waffles, featuring juicy buttermilk fried chicken and toasted waffles along with a hint of piccalilli pickles, ruby grapefruit and semi-spiced maple syrup is also another option for a complete myriad of flavours and textures.
Ending off in sweet indulgence, the “It’s a Piece of Cake” dessert board offers unforgettable treats. From red velvet cakes, mini tarts and lemon stones to cinnamon palmier, macarons and an individual filled cone stand, everyone will leave brunch thoroughly contented. Guests can also enjoy free-flow wine and prosecco at an additional $58++ per person and free-flow Champagne and bottled beer at an additional $88++ per person.
Dinner at Six Senses Brasserie is also an intimate affair with a selection of premium Southern European dishes and desserts. From Mushroom Cappuccino ($18++), a rich and earthy soup with deep flavours, to the Dill Salt & Thyme Baked Seabass ($52++) with crisp farm-picked salad, puffed red quinoa, citrus oil, bone broth and turmeric hot pour; meals at Six Senses Brasserie are full of umami and promises an explosion of flavour.
For those who cannot get enough of savoury egg dishes and breakfast pastries, the ‘Brunch After Dark’ options – Sir Benedict Eggs ($25++), Lobster Mac & Cheese ($28++) and Quick Seared Wagyu Beef Carpaccio ($27++) – are sure to satisfy. Brunch After Dark is also served with a glass of house prosecco.
The palette of Six Senses Brasserie’s menu will change with the seasons. In the months to come, Chef Ian’s collection of menus will transform into a library of visual arts representing healthy recommendations on eating and living well.
